Over the past few months, Lao Gan Ma Chili Crisp Oil has become an essential item in my pantry. Its aromatic and rich chili flavor, coupled with the delightful crunch of crisp bits, elevates the taste experience to new heights. It has truly transformed all my dishes.

Lao Gan Ma (老干妈), also known as “old godmother,” is a renowned Chinese brand of chili sauce. This was founded by Tao Huabi in Guizhou, China, back in 1997. The brand offers a diverse selection of chili sauce products, with Lao Gan Ma Spicy Chili Crisp being the most popular product outside Chinese market.

Similar to Vietnamese Sate Sauce , I love to put Lao Gan Ma Chili Oil on a variety of dishes, whether it’s noodles, fried rice, or even egg toast. Among all, this Lao Gan Ma noodle recipe is my ultimate go-to when I’m feeling lazy but still crave a scrumptious meal.

Lao Gan Ma’s Spicy Chili Crisp, their most beloved product, is made from a blend of Chili, fermented soybean, and Sichuan pepper. It has an exceptional flavor and irresistibly “crisp” texture.

🙋‍♀️ Where could I buy Lao Gan Ma Chili Crisp?

In Germany, I found out that Lao Gan Ma chili crisp is readily available in major Asian markets, particularly those specializing in Chinese or Southeast Asian products. Lao Gan Ma has various kinds of chili sauces, so ensure you select the correct one by looking for the term “crispy chili in oil” on the label.

You only need only 4 ingredients for this recipe:

  • Lao Gan Ma Chili Crisp Oil: it’s a fantastic choice for this recipe, but you can also use any store-bought or homemade chili oil. Besides, Vietnamese Chili Oil (Sốt Sate) works wonderfully as a substitute.
  • Your favorite kind of noodles: Feel free to choose from rice noodles, egg noodles, or even pasta. Personally, I love the silky, springy, and chewy texture of hand-pulled noodles.
  • All-purpose Soy Sauce
  • Chinese Black Vinegar
  • Chili oil Fried Egg and Cucumber (optional): These ingredients bring a touch of protein and fiber to the dish, making it into a wholesome and well-balanced meal.

📝 Instructions

  • Start by preparing the Chili Oil Fried Egg and julienne cucumber (if available).
The fried eggs are bathed in a rich, aromatic chili oil, creating a striking contrast of colors.
  • In a bowl, combine Lao Gan Ma Chili Oil, soy sauce, and Chinese black vinegar in a 2:1:1 ratio (you can adjust the proportions to suit your taste).

  • Cook the noodles according to the package instructions. Once cooked, drain the noodles and immediately toss them in the sauce, ensuring that all the noodles are coated evenly. Hot noodles absorb the sauce more effectively.

  • 2 tbsp Lao Gan Ma Chili Crisp Oil (adjust to taste)
  • 1 tbsp All-purpose soy sauce (adjust to taste)
  • 1 tbsp Chinese black vinegar (adjust to taste)
  • 1 Chili oil egg (optional)
  • Cucumber (julienned) (optional)

Instructions
 

  • Prepare Chili Oil Fried Egg and julienned cucumber (if available).
  • In a bowl, mix Lao Gan Ma Chili Oil, soy sauce, and Chinese black vinegar in a 2:1:1 ratio (adjust to taste).
  • Cook the noodles as per the package instructions. Drain and immediately toss them in the sauce for even coating; hot noodles absorb the sauce better.
  • Place the saucy noodles on a plate and top them off with a chili oil fried egg and julienned cucumber on top. Enjoy!
