Air fryer Vietnamese fish sauce chicken wings (Cánh Gà Chiên Nước Mắm) are the Vietnamese version of FINGER LICKIN’ GOOD chicken wings but without the added fat and calories of deep frying.
Just like Bánh Flan (Vietnamese Flan) , these chicken wings hold a place in my heart as childhood comfort food.
Every weekend, my mom would prepare this special treat for our whole family. Normally, she would deep-fry the chicken wings.
My version of Vietnamese fish sauce wings still features delicate chicken wings with a crispy outer crust, coated in a delectable sweet and savory fish sauce glaze. By frying in an air fryer, it’s much less greasy without excess oil.

Key ingredients for Vietnamese Fish Sauce Chicken Wings (Cánh Gà Chiên Nước Mắm)
- For the marinade: chicken powder and garlic powder, infusing the wings with a savory flavor to complement the sweet and umami fish sauce glaze.
- For the batter: cornstarch and baking powder. The secret of cripsy chicken wing is dry skin. Cornstarch and baking powder help draw moisture to the surface, where it can evaporate. These ingredients are essential for achieving that perfect wing texture.
- For the sauce: fish sauce, sugar, oyster sauce, butter, lime juice, minced garlic, fresh chili, and cilantro, creating a sweet, savory, and fresh combination.
📝 Instructions
- Preheat your air fryer to 180°C (356°F).
- Pat the skin dry using paper towels.
- In a large mixing bowl, combine the chicken powder and garlic powder. Add the chicken wings and toss to coat evenly.
- Add the cornstarch and baking powder, toss the chicken wings to coat evenly, shake off any excess.
- Place the wings in a single layer in the air fryer basket. Cook the chicken wings in the air fryer for 15 minutes.
- Increase the temperature to 200°C (376°F), flip the chicken wings, air fry them for other 10 minutes until they are crispy and golden brown.
- In a small sauce pan, sauté the minced garlic for 1-2 minutes, until fragrant. Add the fish sauce, oyster sauce and sugar to the saucepan and stir until the sugar dissolves. Simmer the mixture for about 1 minute, until it thickens slightly.
- Add the butter, stir until the butter melts. Add lime juice, chopped cilantro and fresh chili.
- Once the chicken wings are cooked, remove them from the air fryer and place them in a large mixing bowl. Pour the fish sauce glaze over the chicken wings and toss to coat evenly.
- Serve the chicken wings immediately and enjoy!

Equipment
- 1 Air fryer
- 1 Sauce pan
Ingredients
Chicken wings marinade
- 1.1 pound chicken wings (500g) (cut into flats and drumettes)
- ½ tsp chicken powder
- ¼ tsp garlic powder
For the batter
- 1/2 tbsp baking powder
- 2 tbsp cornstarch
For the fish sauce glaze
- 2 tbsp sugar
- 2 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp butter (15g)
- 1 tbsp minced garlic
- 1 tbsp chopped fresh chilli (goat horn, jalapenos or Thai bird’s eye red chilies)
- 2 tbsp chopped cilantro (to your taste)
- 1 tbsp lime juice (from ¼ lime)
Instructions
The crispy chicken wings:
- Set your air fryer to preheat at 180°C (356°F).
- Use paper towels to pat the wings' skin dry.
- In a mixing bowl, combine chicken powder and garlic powder. Add the chicken wings and toss them to evenly coat.
- Add cornstarch and baking powder to the bowl. Toss the chicken wings again to ensure even coating, and shake off any excess.
- Place the wings in a single layer in the air fryer basket. Air-fry the chicken wings for 15 minutes.
