Taking cues from the Vietnamese lemongrass beef noodle salad (Bún Bò Xào / Bún Bò Nam Bộ) , I whipped up this tasty lemongrass ground beef rice bowl. While it’s not a traditional Vietnamese dish (ground beef isn’t a Vietnamese staple), but let me tell you, there are plenty of reasons why you’ll be totally hooked:
- It’s a breeze to whip up—super quick and easy.
- Just a handful of ingredients, and I bet they’re already hanging out in your Asian pantry.
- It’s incredibly versatile—swap out the ground beef for pork, chicken, turkey, or even vegan meat. The choice is all yours!

PREPARE STEAMED JASMINE RICE
My super quick yet fluffy microwaved jasmine rice saves me way more time in the kitchen.
- Rinse the rice: Place the rice in a bowl, fill it with water, swirl the water around with your hand, and then drain. Repeat this process 2 to 3 times until the water looks clear. Drain the rice well.
- In a microwave-safe bowl, add the rice along with 1+3/4 cups (690ml) of boiling water.
- Cover the bowl with a plate and place another plate underneath to catch any water that might leak during cooking.
- Cook the rice on high in the microwave for 10 minutes (mine is 700 watts). Once done, gently fluff the rice, cover the bowl again, and continue microwaving for an extra 3 minutes.
- Take the rice out of the microwave and allow it to rest for 5 minutes.
