EASY-PEASY MATCHA WAFFLES
If you’re a big fan of Matcha (抹茶) (like I am), you understand the joy of exploring sweets and desserts infused with that lovely matcha flavor. That’s why I came up with this waffle recipe.
These waffles have a crispy outer layer and a soft, moist, and fluffy inside, thanks to two key ingredients: cornstarch and buttermilk. Cornstarch reduces the overall gluten content in the flour, making the waffles exceptionally light inside. Meanwhile, buttermilk adds extra fluffiness to these matcha waffles.
What’s even better is that they’re incredibly easy to make. All you need is a whisk and two bowls.
Matcha Waffles Done Ahead of Time
For this recipe, you can save a lot of cooking time with two preparation methods:
- Prepare a large batch of waffles and store them in the freezer. When you crave a quick breakfast or snack, simply take one out and toast it in the toaster oven or air fryer.
- Mix all the dry and wet ingredients separately the night before. When it’s time to cook, just combine the wet and dry ingredients while your waffle iron is heating up. This way, you can still enjoy freshly made waffles without the stress of last-minute cooking.
Ingredients
Wet ingredients:
- Buttermilk
- Egg
- Melted butter
Dry ingredients:
- All-purpose flour
- Cornstarch (or Potato Starch)
- Matcha powder (culinary grade or ceremonial grade)
- Vanilla sugar (or Vanilla extract)
- Sugar
- Salt
- Baking powder
- Baking soda
Instructions
- Combine all the wet ingredients in one bowl.
- Sift the dry ingredients into the bowl of wet ingredients.
- Mix the ingredients until they are just combined, being careful not to overmix the batter.
- Preheat your waffle iron. Brush some melted butter onto the waffle iron’s surface to prevent sticking.
- Ladle three to four scoops of batter onto the waffle iron, adjusting the amount depending on the size of your waffle iron.
- Cook the waffles until they’re fully done (no more steam is rising from the waffle maker).
- Carefully remove the waffles from the iron and enjoy!
Helpful Tips
- You could make homemade buttermilk by mixing 1 cup (250ml) milk with 1 tsp vinegar (5%). Let it sit 10 minutes.
- Cornstarch can be substituted with potato starch.
- Using ceremonial grade matcha gives the waffles a more vibrant green color.
- If your sugar is in large granules, you can mix it with the wet ingredients instead of dry ingredients.

- Use a ladle to pour three to four scoops of batter onto the waffle iron, adjusting the quantity depending on your waffle iron's size.
