What You’ll Need

  • Eggs
  • Chili oil: homemade or store-bought chili oil (E.g. Lao Gan Ma Chili Crips), or my Vietnamese chili oil (sate sauce) with a hint of lemongrass flavor.

How To Do

  • Heating a nonstick pan over medium-low heat. Once the pan is hot, drizzle some chili oil.
  • Crack eggs into the pan. Cook about 1 minute while using a spoon to pour the hot chili oil over eggs.

Instructions
 

  • Heat a nonstick pan over medium-low heat. When the pan is hot, drizzle some Lao Gan Ma chili crisp (or homemade chili oil)
  • Crack eggs into the pan. Fiy them with chili oil for about 1 minute, continuously spooning the hot chili oil over them.
  • Reduce the heat to low and continue cooking until the egg whites are fully cooked.
  • Serve chili oil fried eggs on toast, fried rice, or noodles.
